Stairs are a common one to crack between the skirting and wall - ours also cracked quite badly and had chunks of plaster coming off in places. You should def wait a good few months while the house is drying and shrinking - let everything finish cracking before you patch it up. If its really bad you would be within your rights to get harron to repair it, however for ours I just re-sealed the more minor cracks with builders/decorators caulk and for the bad bits cleared out the crumbling plaster and filled with polyfilla, sanded and re-painted.
I've not tackled the cracking windows yet. Oddly our windows are sealed with caulk which while is slightly flexible, isnt great for windows. Our old house had a silicone bead around the windows which seems more suitable to a window which can expand and contact as it goes through hot sunny days and cold nights. I'll probably re-seal the windows with silicone.
You shouldnt be getting many cracks on the walls at the joins of the plasterboards, if you are that would suggest they were'nt taped before being skimmed.
